Ingredients for the Chicken Pie
1 whole chicken
2 chopped onions
250ml full cream milk
150ml mazenna mixed with chicken stock
A punnet of mushrooms sliced
2 tbsp lemon pepper
2 large garlic cloves
2 tbsp mixed herbs
1 tbsp butter
2 tbsp olive oil
Preheat the oven
Preheat your oven to 180 degrees celcius before you start preparing your dish.
Place the chicken in a pot and pour boiling hot water over it. Turn your stove on high, and allow the chicken to boil for an hour or until the chicken falls off the bone easily.
Once the chicken has completed boiling, turn the stove off and allow to cool.
Remove the chicken off the bone and shred into smaller pieces and place in separate bowl.
Place a frying pan on high heat on the stove. Add the olive oil to the pan and allow to warm up. Place your onions in the pan and fry until golden brown. Next, add the butter and garlic to the onions. Once the butter has melted, add the mushrooms.
Next, add your mixed herbs, lemon pepper & salt to the mixture.
Once the mushrooms are soft, add the cream and milk and simmer for 5-8min. After 5-8min, add half the mazenna & chicken stock mixture and stir constantly. Add more until you reach a thick consistency.
Pour the mixture over the chicken and mix it all up. In a separate casserole dish, pour the mixture into the dish and flatten it out.
Add some flour to a flat surface and layout the pastry. Use a roller and roll it out until its flat. Pick up the pastry and place on top of the mixture in the casserole dish and cut off the sides of the pastry.
Use a cutter to cut out shapes for the top as you wish.
Crack one egg in a bowl and whisk up. Using a brush, lightly paint the top of the pastry with the egg mixture so that you get a lovely golden brown colour when the dish comes out the oven.
Place in the oven at 180 degrees celsius for approx 45min.
