How to Cook a Christmas Cheesy Meatball Platter

Prep time – 30min | Cooking Time 30min – Serves 6

Ingredients for the Meatball Dish

1kg beef mince
500g pork mince
1 egg
1 onion
Fresh cut up parsley
Bread crumbs
Salt & pepper
Handful of Cheddar & Mozzarella cheese (used for the top of the dish)
Cream Cheese

Ingredients for the Sauce

1 tin of diced tomatoes
1-2 carrots
1/2 onion
1 garlic clove
Olive oil
Salt & pepper

Ingredients for the Pastries & Rolls

Phyllo Pastry
Basil Pesto
Salt & Pepper
Veg Spice

The Meatballs

In a mixing bowl, add the beef & pork mince, 1 egg, bread crumbs, salt & pepper, onion & parsley and mix it together well. If you prefer. You can use your own preferred meatball recipe here.

Roll the meatballs up into golf size balls and place on a baking tray. Bake for roughly 10-15 minutes until golden brown.

The Sauce

Chop up your carrots, onion and celery into small chunks and place into a pot. Finely chop up your garlic and add. Empty the whole can of diced tomatoes and drizzle with olive oil.

Place on medium to high heat on the stove and until the carrots and celery have softened.

Blend the mixture in a blender until you have a puree textured sauce.

The Dish

Pour all the sauce into a casserole dish and lay the cooked meatballs evenly out on top of the sauce. Add teaspoons of cream cheese in between the meatballs and top with grated cheddar and mozzarella cheese.

Bake for a further 10-15 minutes or until cheese goes slightly brown on top.

The Bread Rolls

Break the bread dough into small balls and place onto a baking tray. Sprinkle with salt & thyme and place in the oven. Remove when they go golden brown on top.

The Pastries

Sprinkle some flour onto a board or kitchen counter and roll the phyllo pastry out (Not too thin). Using cookie cutters (Christmas shapes), cut shapes out of the pastry. Brush melted butter on the top of the pastries and add salt, parsley or veggie salt to the top of them. Bake until golden brown.

Using another sheet of pastry, lay it out on the counter but this time do not roll it out. Brush the top of the pastry with basil pesto (You can use whatever you prefer here i.e bovril & cheese or bacon & cheese). Roll the pastry back into the cylindrical shape it came in and cut the cylinder horizontally into circles.

Take each circle and roll it out into a christmas tree shapes.

Place in the oven and bake until golden brown.

The Platter

Place the meatball dish onto a large platter board. Place the pastries and rolls around the board and decorate with baby tomatoes, rocket and cut up chives. Enjoy!
