Crushed black pepper
Pre heat oven to 140 degrees celsius.
In a roasting dish, apply a generous helping of olive oil, garlic salt and black pepper to the bottom of the dish.
Add a sprinkle of garlic salt & crushed black pepper to both sides of the chops. Pat the chops so that the spices soak well into the meat.
Add the chops to the dish. Move the chops around in the pan so that they are well coated with the olive oil. Turn them over and repeat.
Add a generous amount of mint leaves and rosemary to the top of the chops. Squeeze a good amount of lemon juice over the chops. Next, add the mint jelly to the top of each chop with a drizzle of more olive oil.
Cover the dish with tin foil and bake for 45 min at 140 degrees celsius.
After 45 min, remove from the oven, remove the tin foil and grill them in the oven for a further 5-10 min until crispy on top.
