4 pork neck steaks

Prepping The Weber
We recommend using roughly 18 coals on each side. Light the coals. Once the coals turn grey, you will know that the Weber is ready for your meat.
In a pot on high heat, add the onions, garlic, sweet basil and chilli. Add some salt and allow to simmer. Place your tomatoes in a separate bowl and pour boiling water over them. Allow to rest for approximately 5 min until the skin starts to lift. Peel off the skin on all the tomatoes.
At this point, you can cut the tomatoes up into chunks and add them to the onion mixture simmering on the stove. Give it a good stir, place the lid onto the pot and allow to simmer on low heat.
After roughly 10min, you will see that your sauce is starting to reduce nicely. Add some cream to the sauce, and allow to reduce even further.
Place the steaks on the weber, close the lid, and allow to cook for 8min.
After 8 min, turn each of the steaks over and allow to cook for at least another 10min.
After 10 min, turn the steaks over once more and season with salt and pepper. And allow to cook for a further 10min.
You want to cook the steaks for at least 40 min in total.
